I can only comment on Hot Italian sausage. The fact that this company does not use nitrates is a huge plus for me. There's a ton of companies out there that advertise no nitrates but it's just not true. Read the fine print. This product is one of the best Italian sausage that I've ever bought over the counter. You will not be disappointed. Thank you for your commitment to a clean and natural product.

The BEST sausage and bacon EVER! Every time I get a product from this company I can't believe how phenomenal it is. I was vegetarian for years and when I first had bacon again I was severely disappointed. That was not this bacon. This bacon makes me think I was delusional for ever going a day without meat lol. 10000/10. Absolutely amazing!!!!!!!!!

This review is primarily for truckers who pick up from/deliver to this business. * This place sits on top of a hill, as the name implies, so do not come on an almost empty tank of fuel
* BY APPOINTMENT ONLY, unless you're a contract carrier.
* Only 1 dock door dedicated to meat delivery, but plenty of room to maneuver.
* Limited overnight parking, but no facilities after business hours.
* There's a Walmart 3.5 miles away but no parking in the black dirt lots across the street.

I purchased a large smoked ham shank to utilize in a recipe for ham and beans. Not sure if it's just this company but all the other ham shanks I purchased were cut through the bone, this company does not do that. It is impossible to Cut the bone of a ham shank in a residential setting. This makes it much more difficult to utilize in the recipe especially when you're doing a soup where you're making stock that has to Simmer for several hours. I do not recommend this shank.

I recently discovered Hill's Hickory Smoked Honey Ham in my local Rosauers/Super 1 store. I don't often eat pork, but I love to have a ham during the holidays. The small ham I purchased not only looked tasty, what sold me was what wasn't in the ham - nitrites, gluten, etc. Well, it tasted as good as it looked, sliced easily, and there was no fat or gristle. I've thrown some leftovers into omelets and a casserole (the ham freezes well). My guests loved it too. Did I mention the ham was reasonably priced? I'm going to give one as a gift!

Hill Meat Company ⭐️⭐️⭐️⭐️⭐️

Hill’s is a family owned and operated company that has been making pork products in Pendleton, Oregon, since 1947. Normally, Albertson’s carries Hills Original Pork Sausage Links and their packaged Double Smoked Thick Sliced Bacon, as does Fred Meyer’s. On 1/31/22, I was at the Albertson’s located in the Hillcrest Shopping Center in Boise. I noticed they suddenly had a lot more Hill’s products. I bought the Bacon & Hatch Chile Pork Sausage Links and some of the Fresh Peppered Bacon. Both were amazing!

Prior to discovering Hill’s sausage, I bought sausage links to cook at home maybe once or twice. Occasionally, I would order them for breakfast if dining out, but I had no interest in buying a package of it. It was fatty and delicious, but it just didn’t seem that special. That wasn’t till about three years ago when I unknowingly visited an Adam Hegsted restaurant in North Idaho. The place I stayed at gave guests the option of a free continental breakfast or a coupon good for $5 off of a breakfast at the restaurant next door. I opted to eat at the restaurant. Even though I ordered a simple breakfast of two eggs over easy, sausage and toast, I could tell from the presentation alone that this was going to be something special. First of all, these were the most perfectly cooked over easy eggs I’ve ever seen in my life, and I’ve cooked a few myself. The toast homemade sourdough, served with homemade Huckleberry jam. The sausage looked like regular sausage, but then I bit into one. Whoa! It was the best sausage I’ve ever eaten in my life. When my server came back I asked what brand of sausage they were using. The cook came out from back in the kitchen to chat with me. He shared with me that they used Hills Meats, and the name of the owner. I later did a little research and learned the owner was a James Beard nominated chef. Even though he wasn’t present, he clearly set a high standard that was being well-maintained. Upon returning home, I immediately started to search out Hill’s sausage. I was so excited the first time I found it and brought it home to cook. Then I tried the bacon and loved it just as much. If you haven’t tried Hills, you’re in for a special treat. The fact that a James Beard nominated chef makes a point to serve it in his restaurants speaks volumes.
