In 2020 I paid for a 1200 pound Angus steer plus the processing fees. The five boxes of cut meat were loaded into my truck. I inquired about the small number of boxes and was told "that's all of it." Being suspicious, I weighed all the boxes when I got home. It only weighed out at 300 pounds, which included the box of bones! This meat cost me over $11 per pound, most of which was hamburger. I know Angus usually has a yield over 50 percent of standing weight, so where did the rest of the meat go? I know I got cheated. As a result I will never trust a butcher with a store front again.
