First time bring my deer here. It took about 6 weeks to get my deer back which is far too long compared to other processors in the area and the summer sausage is unedible with no flavor/seasoning. The slim Jim sticks are also dry and not very good either.

So many things wrong or done poorly. I took 4 large Mulefoot hogs to Zalmas last June. When we dropped off, there were 6 small white pigs ahead of us. They swore we would get our pigs back. Guess what? What we got was a combination. Some packages had Mulefoot meat - known for being a red meat with lots of marbling. Some was white with no marbling like supermarket pork. Some bacon was good sized from a 325 pound pig, some was pale and small like from a 200 pound pig. One of my customers for a whole hog requested half ham and half roast from the hind quarter. He got roast and no ham. Another whole hog customer ordered smoked hams and got no bacon or hams. He also ordered soup bones, which were included in the 4th hog. A third customer wanted the head to make head cheese. No head and only 8 pork chops. The packaging had blood stains like the meat had frozen and then thawed - terrible presentation. Everyone complained that some cuts were good and others were like supermarket pork (white pigs). Needless to say my three best customers didn’t order from me again. I threw out the 4th hog that was for me - even the dog wasn’t enthused.
