Took a mini trip into Woodland park just so we could visit this butcher shop. The staff was extremely kind and helpful and we left with their rib eyes, bacon and cheddar burgers, jalapeño bacon, ground yak and their hatch green chili brats. SO GOOD! We will be returning!

Picked up some applewood smoked bacon, and some marrow bones. The guy be on the counter was nice enough to cut a femur into fourths for my big boys. Oh yeah, and the bacon came out great! We'll be going back for more.

I wish I could leave a higher review.

I ordered some special cuts for Christmas from the Colorado Springs store, set for pickup on Friday Dec 23rd. Show up, and there's a sign on the window that it's permanently closed, and to visit their main location in Woodland Park.

They took my contact info, name and phone number. A call would have been nice. I had to scrap the entire Christmas dinner because no other butcher shop I could find on Friday afternoon could get the cuts done since it was now last minute.

I'm not rating one star, because, well s**t happens. In addition, the green chili sausages I bought on the first visit were one of the best I've ever had.

Such amazing cuts of meat. Tried the blue cheese and bacon sausage, the habanero and mango sausage, and the special which was pork belly wrapped around a tenderloin, I believe. All of it had amazing flavor. Was even given a tip on how to cook the pork belly / tenderloin piece and it was AMAZING!! We will be back!
