This place is a hidden gem in Walsenburg, when I was visiting this town more in the early and mid 2010s they didn’t have anything cool like this… that’s because they were founded in 2018 and one pandemic later they’re still around and I can leave this review

While they do have 2 of their own beers brewed in house, most taps are of local southern CO breweries but today I was in a cocktail mood so I decided to get 2 cocktails that’s spoke to me. I had the A kick in the Hinney which was smooth and refreshing and Tequila Mockingbird which reminded me of a tequila based Paloma, the bitterness was nice and I enjoyed both of my drinks.

The appetizer of the day was Shishito Peppers and they were phenomenal, very happy with it. For my main entree I had the Blue Corn Polenta which was amazing as well. It’s a thick soup with a black bean base I believe, I’ll say this, it’s very good but to me it could have used a bit of spice but that’s why you can ask for hot sauce.

The best part is everything was good and the price was still reasonable. I ordered 2 cocktails, an appetizer and a main and it came out to 43$ (w/o a tip, but always tip yall), and when i mentioned how reasonable it was bartender just said they can’t totally price out the locals. If I had moderation it definitely would have been cheaper, but I’d say if you just get food, or get food and one drink it’ll probably cost ya between 20-30$.

Overall I was more than satisfied, I came here wanting to support a local business and in this case this business is one I’d like to come back to. If you’re driving through Walsenburg or in the area and want a beer, cocktail or food, I’d recommend you stop by, you’re not just supporting a local business/the local population but also a GOOD local business. Overall I do recommend this place and will be back one day

First visit to Colorado - I had heard good things aboit the food in town, but I didn't expect to find such a welcoming atmosphere, spirits as high as the elevation, or a pile of food that made me forget how exhausted I was from the walk across the street. I'm from a place called Sea Level. The first 24 hours was a bit of a struggle, but that bowl of lamb curry and a bar full of down-to-earth, kind humans, and a hell of a bartender hit the spot. Definitely on my short list for return visits. Aubrey runs a tight ship, and the Canary is an exemplary facet of the diamond-in-the-rough that is Walsenberg. A little hamlet that big coal left behind, there's plenty of sparkle to keep bringing you back.

Stumbled upon this gem of a restaurant on our way to the hot springs at the Sand Dunes. Menu is FILLED with gluten free, dairy free and vegan dishes. I had the butternut squash with quinoa and pomegranate special; GF, DF and vegan! My husband had the polenta with extra crispy bacon on top. Decent beer list and lots of fun cocktails like Rosemary's Baby and Tequila Mockingbird. They had posters for open mic nights, trivia nights and special events. We will definitely be back!

This place is a unicorn in Walsenburg. They have unique, fresh and healthy menu options that were very tasty and the beer is great. Compared to most of the other options in town which are either fast food or Mexican, this location really stands out. Please visit them so they survive:-) !!!

What a fun and unexpected find! We’ve been several times and are always warmly welcomed. The space is playful and inviting. Loved the option to sit at the bar and write notes/color! The cocktails are unique and tasty and the brews are very good. It’s walking distance to the Museum of Friends art gallery down the street. Both places are well worth a visit!
